This summer, we were over good friends of ours house for a BBQ. We had your classic, traditional burgers, chips, dip, and hot dogs. And then, we had “the salad”. It was the most delicious salad that I have ever tasted. Made with a base of cabbage and and kale, Ashley put together this mix of deliciousness that I just had to recreate!
This is a salad that I will enjoy all winter long with the curly kale that will come in our CSA share!
Here is the recipe that I created:
Ingredients
- 2 cups napa cabbage, chopped
- 1 cups curly kale, chopped
- 1/4 cup dried cranberries
- 1/8 cup dried cherries (optional)
- 1/2 chopped pear (with skin on)
- 1/2 chopped apple (with skin on)
- 1/4 cup sliced almonds (optional)
- 3/4 cup Lemon Poppyseed Dressing
- 1 Tbsp honey
- 1/2 squeezed lime
Directions
- Toss all ingredients together with the exception of dressing, honey, and lime.
- Mix together Lemon Poppyseed Dressing, honey, and lime.
- Just before serving, pour dressing over salad and toss.
- Serve salad chillled.
