We are back from a whirlwind tour to PA for the holidays. A wonderful time had by all! 9 days filled with Mama H’s food…YUM!
And now we are back and ready to get back into a food routine. We came home to an empty fridge and empty pantry so it’s time to stock up.
Here’s what’s in store for the week on our Weekly Menu Plan:
Friday: Chicken Quesadillas
Whole Foods had rotisserie chickens on sale when I went today – 2/14.98. It wasn’t as good of a deal as the 2/10 they had at the end of the summer but for organic chickens, I’ll take it! Ben’s team (Iowa) is playing in their bowl tonight so this is a great finger food for watching the game!
Saturday: Homemade Fish Sticks with Rice and Corn
Sunday: Chicken A-La King and Biscuits
So this is a meal that Ben remembers from childhood so I’ll be creating it based off of a memory. Here’s hopin’…
Monday: Pork Chops with Fingerling Potatoes
Tuesday: Chicken Stir-Fry
Wednesday: Chicken Parm
Thursday: Meatloaf with Mashed Potatoes
Friday: Sloppy Joes with Terra Chips
Saturday: Pizza Night!
It’s the NOFA conference for me today! My first farming conference and I can’t wait. Ben and the kiddos are on their own.
