Chicken Parm with Spinach {Recipe}

Chicken Parm has become one of my families favorite meals. It has become a fairly routine meal of choice after I have cooked a large pot of homemade spaghetti sauce (as I did last week). It sounds like this glorious, labor intensive meal when in reality, it is not at all and is instead a fairly quick prep that reaps the benefits of your family thinking you are just an amazing cook!

Here is how my Chicken Parm goes…

First I take about three breasts of organic chicken and slice them in half lengthwise with the idea being to thin them out. You could alternatively buy cutlets.


I crack my eggs in one bowl and whisk them with a fork. In another bowl I make my breading mixture by combining bread crumbs, flour, basil, oregano, and a pinch of salt.


After putting a bit of oil on a pan, I dip each piece of chicken first in the egg then in the bread mixture and then I place them on the pan.


I cook for about 15 minutes on each side at 400 degrees until they are done. This will all depend on thickness of the chicken.

I then place a few leaves of spinach on top of the chicken and top that with sauce and some mozzerella cheese.


I bake for another 10 minutes.

Serve with pasta if it suits your family and some additional sauce. YUM!

Chicken Parm with Spinach


  • 3 breasts of chicken (or 6-8 cutlets)
  • 2 eggs
  • 1 cup breadcrumbs
  • 3 Tbsp flour
  • 1 Tbsp oregano or basil
  • pinch salt
  • pinch pepper
  • 2 Tbsp olive oil
  • 2-3 cups tomato sauce (homemade is best:)
  • 3/4 cup mozzerella cheese
  • handful spinach
  • 1 box whole wheat pasta


  1. Preheat oven to 400 degrees.
  2. Cut chicken breasts in half so that there are 6 pieces total (if you are using cutlets, skip this step).
  3. In one bowl, whisk together eggs. In a separate bowl, whisk together flour, breadcrumbs, oregano, salt,and pepper.
  4. Line a cookie sheet with foil and spread olive oil over it.
  5. For each piece of chicken, dip in egg mixture and then immediately in breadcrumb mixture. Place on cookie sheet.
  6. Bake at 400 degrees for 15 minutes on each side or until chicken is just cooked through.
  7. Take chicken out and place on each piece a bunch of fresh spinach leaves, then 1/8 cup of sauce, then top with mozzerella cheese.
  8. Bake for another 10 minutes until cheese is melted.
  9. Serve over cooked pasta and add extra sauce if you'd like:)
  10. Enjoy!!
