Here is how our usual dinner goes:
C says: “Mooommmmmn(sounds like maaaaaahhm), what are we having tonight?” {sounds a bit disgruntled}
Me: “Meatloaf”
{Screams and cheers and fist pumping heard and seen from the crowd}
Me (thinking): Mwahahahahaha
We have had A LOT of kale and zucchini to go around lately and so I have been trying to find the most creative ways to work it into everyone’s diet. I happened to be making meatloaf the other night (it is a family favorite – another one of those meals that every single person will eat) and so I figured I would throw some in there for everyone to try.
The verdict? No one minded one bit. In fact, if there weren’t green and yellow specs to be seen, I am pretty sure no one would have noticed. I also served it with some roasted potatoes, carrots, and beets so everyone was concentrating more on having to try a beet (which they ended up enjoying) and they already were excited about the potatoes and carrots.
Kale and Zucchini Meatloaf {Recipe}
Ingredients:
1 lb. grassfed ground beef (I received mine from Philly Cow Share!)
1 lb. organic ground pork
2 eggs
3/4 cups bread crumbs
1/4 cup chopped fresh parsley
1/2 cup chopped fresh kale
1/3 cup chopped fresh zucchini
1/2 cup ketchup
Directions:
1. Preheat oven to 350 degrees.
2. In a large bowl, combine all ingredients and using hands mix thoroughly together.
3. Form into small loaves and place on a cookie sheet. I usually get about 4 small loaves (and I make small ones mostly because I am incredibly inpatient and don’t like to wait for them to cook).
4. Cook for ~45 minutes or until they are done in the middle.

LOVE this! Meatloaf is a family favorite in our house too and I usually do a different recipe every time. Gonna have to try this recipe. My kids always try to guess the “secret ingredient” and there is NO way they would guess kale. LOL

I’ve been putting zucchini in my meatloaf since I found a recipe in a South Beach cookbook years ago. It’s soooo good! AND my son will eat it too
i always load up my meatloaf with tons of veggies, it really bulks up the size and I’m able to have leftovers, which I love.
