Last week’s meal plan was a MAJOR success with a capital M. Seriously, so many dishes were a hit. The biggest hit was the Creamy Chicken Tortilla Soup for sure! It was super hearty and great as a stand alone meal. 4/5 loved it in this house so that is a huge win…
The Honey Mustard Chicken had a delicious taste. I went with the crockpot on this one instead of baking it in the oven and I think that was a mistake. It dried it out too much and became more of a shredded chicken. Still delicious, just not what I had hoped for.
We had friends over on Saturday night and they brought some delicious cheese and then we ended the meal with Slow Cooker Quinoa Chili and some Basic Enchiladas. I forgot to add the extra taco seasoning to the chili at the end…#fail so it was a little bland but still good. That dish is one of my favorites, especially for leftovers during the week!
Now onto this week. A bit busy with the holiday season in full swing…
Sunday: Legit Chili and Cornbread
The fam was none too pleased that last night I switched to Quinoa Chili (I was totally happy)… SO I figured I’d make up for it with the real deal tonight.
Monday: Homemade Chicken Pot Pie
Tuesday: Pizza Night!
C and I are headed to see Rudolph the Musical in Boston with my friend Diane from Dollops of Diane. So the boys are on their own. Thinking this will be a good pizza night!
Wednesday: Homemade Spaghetti Sauce and Meatballs
Thursday: Kielbasa, Mashed Potatoes, and Corn
I have a Mom’s Night Out tonight in our town and I’m responsible for an app. Hmmmm….what to bring. Got any ideas?! Right now I am leaning toward some dumplings – possibly BBQ Chicken Dumplings. The fam would love some too!
Friday: Cavatelli
The famous dish when we have a batch of spaghetti sauce ready to go! Delish! SO excited to be invited to my first New England Cookie Swap! You know I am totally making the amazing S’mores Cookies!
Saturday: Pulled Pork Sandwiches
