All right, so this is the crazy week of birthdays ALONG with the crazy week before Christmas week. Welcome to our holiday life. 😉 So, I am taking it easy on myself this week. The meals will be simple and easy.
Last week’s plan worked great! A favorite on the menu was the Baked Pasta Dish (which we call Cavatelli – but it isn’t really cavatelli at all). Stay tuned because I plan on posting a recipe soon. It is a family fav meaning that we get a 5/5 for family members that enjoy this one. Simple, plain, and homemade. Can’t beat it!
My S’mores cookies went off without a hitch at the cookie swap last Friday night. Everyone decided we would share recipes on the event site so keep up with my Facebook page and I’ll be sure to post the recipe links! Sunday: Terryaki Chicken, Rice, and Green Beans
Monday: Chicken Ranch Casserole
Slow Cooker Quinoa Chili – this is my favorite meal and it is ridiculously healthy so I am making it so that I can have it all week long for lunches.
Tuesday: Birthday Dinner
We are headed out tonight for a birthday dinner! Thinking Not Your Average Joes because of their great allergy awareness. If you know of any other allergy friendly restaurants in the Boston area shout out, I’d love to hear!
Wednesday: Homemade Chicken Nuggets with Rice and Corn
Thursday: Leftover Night!!
Friday: Enchilada Casserole
I am trying my hand at this dish. I haven’t been able to find one that is tailored to our family. Many of the casserole recipes use egg noodles and I know my guys wouldn’t go for it so I’m putting a different spin on it.
Saturday: Irish Beef Stew with Mashed Potatoes
Can you guess whos birthday it is by the title of this meal? Yep – C’s. It’s her favorite meal.
