Weekly Meal Plan – March 23 – 29th and Some Budget Friendly Tips

Back again for another round of meal plans! We have been doing SO good sticking to these over the last few weeks!

Last week we had our nice little St. Patty’s Day feast complete with Soda Bread that we are still enjoying now (it makes 2 huge loaves!). One of my other favorite meals from last week was the Pineapple Chicken in the Crockpot. I will say though, I think I’ll be making it again with a few personal touches. :) We had these friends that lived down the street from us a few years back and he used to make the most amazing pineapple/Jack Daniels marinade. I am think that is the route I will go. A little Jack Daniels never hurt anything.

Now onto this week…

Weekly Meal Plan

Sunday (otherwise known as “cooking day”): Chili in the Crockpot with Sweet Cornbread

I also plan on making some Sausage, Potato, and Kale Soup for us to enjoy during the week. And one of H’s favorite snacks are Snickerdoodles so I’ll be trying some of these out too:)

Monday: Slow Cooker Lentil and Rice Casserole 

I am on a quest to add more meatless meals into our rotation.

Tuesday: Homemade Spaghetti Sauce and Meatballs

We still have some spinach left over from our CSA share 2 weeks ago (Yes, 2 weeks <– one benefit of getting produce locally. It lasts longer)

Wednesday: Leftover Night

Between spaghetti sauce and chili and soups, we will have plenty of good stuff to eat without cooking more!

Thursday: Mama H Cooks

I have a doctor’s appointment in the city that will take all day and I am sure I’ll be stuck in some traffic on my way home. Mama H is watching the kids so I am also sure that they will get whatever they ask for for dinner. :) For G it is usually spareribs and for C it is usually cheeseburgers!

Friday: Homemade Pizza! 

It is CSA pick up week and so that means two things. 1. We are getting the best, most delicious fresh mozzerella balls from Calkin’s Creamery – perfect for a homemade pizza. 2. LOADS of fresh produce perfect for toppings! Add some homemade pizza crust and homemade pizza sauce and you have the perfect pizza.

Saturday: Kale and Zucchini Meatloaf with Mashed Potatoes

Eating Healthy on a Budget

I’m off to make my shopping list for the week. But not before a few AWESOME tips from the American Heart Association on saving money and still eating healthy!

Check out this article for the whole story but here are few of my favorites that I use every day:

  • Use the weekend to make menus – clearly something I LOVE doing:)
  • Cut up veggies and keep them handy in the fridge – this is a great one! My biggest barrier to eating more vegetables and fruits is the prep work. If I do it at the beginning of the week or when I have a few extra minutes, I eliminate that barrier.
  • Buy fruits and vegetables in season – a great money saver! Of course I always add to head to the farmer’s markets for cheaper (and local) produce!
  • Make your own healthy snacks – I am a HUGE fan of this one!! Here are some of my favorite snacks to make. Homemade makes a huge difference in both cost and health!
