Life has been busy…and snowy! We are coming off a week where we seriously totaled upwards of 22 inches of snow. I’m over it. Don’t get me wrong, I love a good snow. Heck, we’re moving to Boston, I better love a good snow. BUT I’m trying to get ready to sell a house y’all, so I need to get rid of this snow. Anyway, it’s getting crazy up in here and so my meal plans need to be a bit more planned out. Down to the breakfasts and lunches, and even snacks. I’m even going to add a grocery list to the weekly meal plan!
Sunday: Chicken Lettuce Wraps - CSA Style and Rice
We haven’t made this in a while but we got some kholrabi from the farm this week and so it seems like perfect timing! I love to eat it with lettuce but two of my kiddos like it over rice:) I’ll most likely double the recipe in order to make it last throughout the week for some lunches.
#List Items: oil, chicken breasts x 2, kholrabi, spring onions (Woot! on my windowsill), 4 garlic cloves, soy sauce, brown sugar, red wine vinegar, sugar, ketchup, lemon juice, hot mustard or Indian Mustard Greens, lettuce leaves (butterhead style)
Monday: Kale and Zucchini Meatloaf
This one is an easy one to make ahead and put in the oven about an hour before dinner time. The only thing then to do is the mashed potatoes. So I just make sure they are washed and peeled earlier in the day.
#List Items: kale, zucchini, 1 pound organic ground pork, 1 pound organic ground beef, ketchup, brown sugar, bread crumbs (homemade are best), flour, eggs, potatoes, Kerrygold butter, salt and pepper
Tuesday: Breakfast for Dinner Night - Eggs, bagels, bacon

Not that I’ll be getting to our grill any time soon but I LOVE Steph’s grilled pizza posts. Here is my favorite! Makes me long for summer:)

Friday: Roasted Chicken with Veggies
I am going to use my Deep Covered Baker to roast a whole chicken with some carrots, potatoes, celery, and herbs that we got from the farm share. We will certainly have leftovers so that can be lunches for the upcoming weekend! And the best part? Homemade organic chicken broth!!!

Saturday: Amazing Vegetable Soup
I’ll be making a gigantic stockpot of this up. I’ll use it all week for lunch. Start it off right with a bunch of veggies. I’ll skip the beef this time:)
#List Items: 96 ounces organic beef broth, 1 yellow onion, 3 cloves garlic, 1 small head organic cabbage, 1 pack organic carrots, 28 ounces crushed tomatoes, Beefy Onion Soup Mix (I need to find a substitute for this stat):), green beans, peas, organic yellow potatoes, frozen corn (I still have one bag from the summer!), and celery
Breakfasts for Week:
Smoothies!: #List Items: yogurt (we love Happy Tots yogurt), frozen fruit (your favorite kinds), bananas, kale or spinach)
Beet Pancakes: #List Items: buttermilk, eggs, beet puree (I’ve got this frozen), flour, baking soda/powder, sugar, Kerrygold butter, whole milk, salt
Snacks for the Week:
Banana Muffins: #List Items: bananas, eggs, flour, oil, Kerrygold butter,baking powder/soda, salt, vanilla
Dad’s Chocolate Chip Cookies: #List Items: chocolate chips, flour, eggs, Kerrygold butter, brown sugar, vanilla, baking soda/powder, salt

I was born & raised in Mississippi, but when I got married in 1982, we moved to Kingston, MA. There was a blizzard a week before Easter. I had no snow boots, big coat or gloves. I would put socks on my hands to go out and check the mail. That was about the only time I ventured out until the snow melted. #SITSBlogging
