So remember how I said before that I “taught” myself to like tomatoes last year? Well, I think I went a little overboard because now I am in love.
I am in love with particularly colorful ones. Don’t get me wrong, red is beautiful and all, but let’s be real, how can you not love a quart full of mixed heirlooms from Eckerton Hill Farm? Or look at this delicious pink/green heirloom from Sunrise CSA…
Drooling yet? I am!
Honestly, we have been getting tons of tomatoes already from both CSA shares, though tons isn’t even enough. Not only have I been finding a way to work them into just about every meal, but I have also been storing them as well.
Here is a look back at our week of tomatoes:
It all started with a batch of seconds from Eckerton Hill Farm (read tomatoes that were almost perfect), my mom, and me, in a kitchen, at 10:00 p.m. at night. No better time to can my first batch of salsa!
The next day my mom was still visiting. We LOVE this local Italian bakery, Corropolese. It makes the best tomato pies so we grabbed one of those and added our own toppings: fresh heirloom tomato slices, goat cheese, and green peppers. YUM!
Of course as soon as the kids saw fresh tomatoes on the counter they requested their ever favorite meal, the one that gets audible cheers…Chicken Bruschetta Pasta!
As we went into the weekend, some of the tomatoes started to get a bit soft so I got a head start on storing them. Here we are with a freezing tutorial!
The week started right back up again and I have been enjoying freshly sliced tomatoes on my sandwiches…some of my creations:

Summer Harvest Chicken Salad with sliced tomato and pickles…
Last night of course there were burgers. Nothing is better than sliced tomato on a burger. Tomato of choice…yellow beefsteaks! I ate mine with a Black Bean and Mushroom Burger. YUM!
And of course I ended the week by using a bunch of paste tomatoes that I had with a few orange colored heirlooms to make a delicious homemade pizza sauce (stay tuned for the recipe):) Can’t wait to try some on a pizza!
The season of tomatoes is just beginning and I am FULL of ideas! Just wait:)
