Last week’s meal plan was a TOTAL success. There was nothing special about it but the meals worked out perfectly. I think a lot of it was me being realistic about what I could do each day. Our days are more routine at this point and so certain days I can put more effort into dinner than others. I am planning on another week just like that.
The hit meal of the week was this Pan Roasted Pork Loin with Leeks from Musings of a Housewife. The salty taste of those leeks makes it and with just a few ingredients it was the perfect weeknight meal!
One failure from last week was the snacks. I plan on re-trying this week!
Here’s our plan for the week:
Sunday: Meatloaf and Mashed Potatoes
Monday: Skinny Chicken Alfredo and Broccoli
Tuesday: Fish Sticks, Rice, and Corn
Wednesday: Flatbread Organic Pizza!
Thursday: Irish Beef Stew
This one takes a little more time and since Ben is working from home today, I’ll have just a bit more time to make it instead of waiting for him to commute. I am heading to a cooking class at Henrietta’s Table in Boston today so this will be a perfect evening meal for the family that I can make when I get home!
Friday: Chicken Lettuce Wraps
Kholrabi is coming strong these days. I’ll have to head to White Barn Farm to grab some along with large lettuce leaves! We LOVE this meal!
Saturday: Spaghetti with Meat Sauce
I am headed to NYC with friends this weekend so Ben is on his own for dinner with the kids while I eat out at Barbuto NYC! Italian for all of us.
