I am sitting here on Sunday night writing up our meal plan. Ben already took care of Sunday’s dinner with the kids. I got back late this evening from a girl’s trip to New York City! We had a blast. I got invited by the “beach moms” (the group of lovely ladies that took me under their wing every week when we traveled to Scusset Beach) to go to NYC for a quick weekend – a tour of the city including lots and lots of food. More on that. Tonight, we have a week of meals to plan!

Monday: Enchiladas with Acorn Squash Enchilada Sauce
This quite possibly is one of my favorite meals. And the kiddos love it too. A great way to celebrate the start of Acorn Squash season!
Tuesday: Crock pot Chili and Nachos
Wednesday: Crock Pot Chicken Stew with Homemade Biscuits
Thursday: Crock Pot Guinness Beef Stew

Friday: Homemade Chicken Nuggets, Rice, and Corn
Saturday: Crock Pot Apple BBQ Pork
