Ahhhh! I can’t believe I just wrote November 1st. Seriously? It seems as though fall is slipping away. We had lingering days of summer and now, the chill is in the air. November, here we come!
We have had some busy weeks getting fall chores done around the house and I am proud to say that (for the most part) my weekly meal plans have NOT fallen by the wayside. I’ve been keeping up pretty well with them. And they have allowed me to become much more realistic about what I can realistically accomplish on these busy fall days.
Last week was filled with successes. I was SO excited to get some new solid additions to our meal plan rotation. The most exciting one for me was this One Dish Slow Cooker Quinoa Tex Mex from Chelsea’s Messy Apron. It not only made an easy, delicious, flavorful and healthy dinner, but also lunches for me for a couple of days after. I am in LOVE with the dish and can’t wait to make it again.
G was sick with Strep throat later in the week and so the Italian Wedding Soup that I made came in handy as it was the perfect meal for his sore throat.
I also snuck in this delicious Grandma Barb’s Apple Bread from A Farmgirl’s Dabbles. The shredded apples….totally made it!

Sunday: Lemon Chicken Piccata with Rice
Monday: Homemade Chicken Pot Pie
Tuesday: Bagels with Cream Cheese, Fruit, and Cheese
We are on the run big time tonight with dance AND flu shots so….it is what it is!
Wednesday: Amazing Vegetable Soup
Thursday: BBQ Place
I am volunteering at the school all day and Great Gma is here so we clearly need to take her to the delish BBQ joint up the street.
Friday: Halloween!! Pizza Night with Neighbors
Saturday: Taco Night
I am heading to Margaritas Mexican Restaurant to celebrate National Nacho Day so the family is on their own. 😉

I’m excited to celebrate National Nacho Day next weekend too! I can’t believe it’s almost here again. It comes around so quickly every year.

Dear Lauryn, About 50+ years ago, my family had a summer camp in the Pocono Mountains in Pocono Lake, Pa. Nearby there was a place called Blakeslee Corners where there was a restaurant and gas station, and when I first saw your name on line, I thought of this unusual name and thought perhaps you were related to them. I think, but not sure, that it was at the intersection of Route 940 and 115. Might this have been your family? I have such fond memories of our summers in the Poconos! Thanks so much.
Hi Gwynne!! What a fabulous memory. I know exactly where you are talking about. Blakeslee isn’t our family, but certainly ironic since there aren’t too many with that name that I know! We spent the last 8 years living just Northwest of Philadelphia - about an hour from the Poconos. So, we saw this name often and have even been to that place that you mention! Small world!
