What a busy weekend! We are just now getting into town. I still need to get to the grocery store. We were visiting family in PA all weekend and had a blast. It was short and sweet but man what a great time! Now we are back just in time for the start of school and work for the week. Glad I have a plan as far as meals go!
Sunday: Rotisserie Chicken
We were traveling back from PA all day today so on the way into town I ran in and grabbed a Rotisserie Chicken from Whole Foods. It was the perfect option for this Sunday!
Monday: Chicken Quesadillas and White Rice
Using the leftover Rotisserie Chicken! I’ll serve these with salsa, avocado, and sour cream. YUM!
Tuesday: Slow Cooker BBQ Chicken Sandwiches with Roasted Potatoes
Wednesday: Homemade Spaghetti Sauce and Meatballs
Thursday: Irish Beef Stew and Mashed Potatoes
Friday: Pizza Night
Saturday: Fresh Vegetable and Pork Lasagna
