Weekly Meal Plan: August 17th – 23rd

What a week/weekend! A fun one for sure. With each passing day, a routine starts to set in. The kids are getting used to the house and we are settling in. We had a great visit with Ben’s parents. They leave today and my cousin comes. I am excited to see her! Even better, she loves home cooked meals. So I’ll be makin’ them!

I finally feel like I have the hyper local farms down. I have visited each many times and know what they all offer! Just today I met the owners of an organic farm just down the road. Made me feel so warm inside, just like back in PA. I got 10 pounds of tomato seconds that I froze last night and a bunch of cukes that I’ll be pickling today.

Weekly Meal Plan

Here’s what we have in store for the week:

Sunday: Beer and Black Bean Chicken Corn Chowder

Like I said, Kelli’s coming and she loves a good savory dish. That’s what she’s gonna get! Not sure what we’ll have with this. Maybe a homemade bread. Hmmm…

Monday:  Breakfast for Dinner Night

We haven’t had one of these in a while! Totally due for it! And I have beets too!

Tuesday: Roasted Chicken with Carrots, Potatoes, and Onions

I’d like to try out some of the new Garlic and Herb butter that Kerrygold sent me and this would be perfect for that. It’s a favorite dish of the kiddos too!

Wednesday: Grilled Fish, Corn on the Cob, and Baked Potatoes

Finally, I am living near a Whole Foods! There is one just a few miles away and I plan on checking it out this week. I am going to grab a good fish that’s on sale!

Thursday: Taco Night 

Good old ground beef tacos with all of the sides!

Friday: Pulled pork

Crock pot time and I have a fun treat for on top of these. Can’t wait to have the fam try!

Saturday: BBQ Time! 

We are having some friends over for a BBQ with their little one today! Super excited to kick back and relax with these guys and some burgers, dogs, pasta salad, corn, whatever!
