Clearly I am a huge tomato fan. I love everything about this season. From cherry tomatoes to lovely large rainbow hued heirlooms to dense fleshy saucers, nothing beats the flavors of these fruits.
For years I have been indulging in homemade sauce. You really can’t go wrong with homemade sauce…until you get it right. Then, you can never turn back.
Oh my friends, have I gotten it right.
A few weeks ago my parents were visiting from PA. I went to our local farm market to grab some things for dinner one night and I go a few staples. I ALWAYS grab Jimmy Nardello Peppers (an amazing sweet pepper). Of course I threw in some sweet onions too. And as I was paying, the angels started singing. This is what I saw:
A giant box of sauce tomatoes. I grabbed them up with no defined purpose, just knowing that I would find something.
The next day as we were all just putzing around I figured I would just throw a bunch of things in the pot with the tomatoes and see.
What came next was heaven. All natural, homemade, perfectly pure, no crap added heaven.
Here is the simplest, most delicious sauce you’ll ever taste. I am TOTALLY biased. <—but in my defense, Mama H agrees!
Sweet Tomato Sauce
1 Tbsp chopped parsley (I used parsley I had preserved in olive oil)
3 cloves of garlic minced
1 large vidalia or sweet onion, diced
5 Jimmy Nardello Peppers, seeded and chopped (you could use sweet peppers but make sure they are SWEET! Jimmys are the best)
2-3 Tbsp olive oil
1 flat of sauce tomatoes (around 10 pounds)
Blanche tomatoes and peel them. You can find see how to blanch them here. You don’t need to squeeze any juice out of them (there won’t be much, that’s why they call them saucers;). Set aside.
In a large stockpot saute parsley, garlic, onion, peppers and olive oil.
Throw in the tomatoes whole. Cook on low-med all day long. Seriously all day. Stir fairly frequently breaking up large chunks with a wooden spoon as you stir.
When the day is done or you want dinner served, enjoy this amazing sauce that has cooked down keeping all the flavor!
