The big game is coming up! Now that we moved to Boston, we’re hoping that our team will be in it. Heck, what a great thing that would be on the friend making front. Clearly they made it because we moved here! 😉
When it comes to party time, I am always thinking of ways to celebrate and generally some great apps, drinks, and desserts will do the trick. We lucked out in the transition from PA to MA. There are some pretty rockin’ grocery stores in these parts. One of the ones that we frequent often is the Big Y. Heading to a grocer there are a few key things that I look for. Number one on my list is a fantastic produce section. It needs to be fresh and often checked. In the winter we rely heavily on our grocery store for fruits that are not in season around here! There also needs to be a large natural or organic foods section since many of the products we buy come from that area.
For us, Big Y is right around the corner AND has my most important features too! This is what I’m talking about when I say produce…
So clearly when I went shopping for supplies to create my vegetable and protein filled nachos for party time, this was a first stop! On a side note, Ben is a big wing guy and I noticed that they have Game Day Seasoned Wings in the butcher shop – Buffalo, Teriyaki, Beer Can and honey BBQ. Score! They also have a bunch of other game day treats too!
I am going to walk you through how to make my super simple Healthy Nachos for your next Super Party!
The first important task is making your own tortilla chips. Grab corn tortillas, a dab of vegetable oil, dash of kosher salt and fresh lime juice. Cut your tortillas into small triangles (or whatever shape moves you). Using a silicone basting brush – VERY lightly baste them with a bit of oil. They do not need to be fully covered. The idea is to use minimal – I used about 2 tsp TOTAL on a large baking sheet full. Sprinkle very lightly with kosher salt and finish off by squeezing the lime over all. Bake these in the oven and when they are crispy they are done. Easy peasy!
Next up you can start layering your nachos.
Cut up your fresh veggies – fresh tomatoes, mini bell peppers, whatever else you have on hand. I love some red onion in there too.
Mix your drained and rinsed pinto beans with the taco sauce. And get your shredded cheese ready.
Starting with a layer of homemade tortilla chips, layer your nachos.
Tortilla chips – beans – veggies – cheese. Repeat.
Microwave for about 40 second until cheese is just melted.
Serve with some salsa! Delish!
