We are officially New Englanders now.
With that comes good seafood. Really good seafood. We headed to the store the other day and it was the first time in a long time I saw “fresh (enter fish name) here” <- for a reasonable price. Heck, just wait until we start getting lobsters!
This trip we picked tilapia. It’s a fish that isn’t so new to us. A few months ago we tried Relished Foods and tilapia was on the menu. Actually this recipe is inspired by it. G fell in love and was excited to try it again.
I fell in love with the idea of a compound butter. I have been experimenting since and the flavors that it brings out of the dishes you choose to cook it with are incredible. For this dish I chose red pepper which is super flavorful, adding in some roasted garlic, onion, cilantro, and of course my fav - Kerrygold Salted Butter. The tilapia is a soft fish that absorbs all of the flavors really well. I very lightly breaded it before putting it on the grill pan.
As we sat down to the dinner table, I could tell after the first bite that we had a winner. It was only a matter of minutes before the fish talk started. We declared Fridays, “Fish Fridays”, where we’ll try a new fish every week. Next up is haddock!
Ingredients
- 1 lb. fresh tilapia
- 2/3 cup bread crumbs
- 2 Tbsp. flour
- 5Tbsp. Kerrygold Salted Butter (take out of fridge 30 minutes before using)
- 1/3 cup diced red pepper
- 3 Tbsp diced onion
- 3 minced garlic cloves
- 2 Tbsp fresh chopped cilantro
- olive oil
Directions
- Drizzle the grill pan with olive oil.
- By hand, mix together the Kerrygold butter, pepper, onion, garlic, and cilantro. Put in fridge while you are prepping the tilapia.
- Mix together bread crumbs and flour in bowl.
- Quickly coat tilapia with the bread crumb/flour mixture.
- Place tilapia on the grill pan.
- Top each filet with 1-2 dollops of the compound butter.
- Grill at around 400-450 degrees until just done.
- ENJOY!
