It has been a while since I have been on the meal plan train. School is back in session, fall is in high gear, and we NEED to get back on track. After the last month, we need some nice organization in our lives when it comes to food. I have decided to start doing my meal plan on Thursdays or Fridays and have them based off of what comes in our CSA share for the week. I realize it is a bit non-traditional but it is what works for our fam:) I’d love to hear what you think!
Before I start with this weeks meal plan I HAVE to say, I made one kickin’ chicken dish last week and I can’t wait to share next week on the blog. Stay tuned!
September 27th-October 3rd
Friday:
Hamburgers and Black Bean Veggie Burgers with Beefsteak Tomatoes
These may be the last of these tomatoes and when I think of a beefsteak, I think of a burger or a Chicken Salad Sandwich
Saturday:
Dinner in the Dell at Eckerton Hill Farm …WOOT!
Sunday:
White Bean and Bacon Soup with Escarole and Grilled Cheese
A bitter green that I don’t have a lot of experience with cooking, this sounds like a classic recipe for this chicory green:)
Monday:
Pork Enchiladas with Rice
Tuesday:
Homemade Spaghetti Sauce, Spaghetti Squash and Meatballs
I’ll use the Sungold Tomatoes from the share as well as some of the frozen tomatoes that I prepped in mid-summer!
Wednesday:
Roasted Pork Loin with Turnips, Squash, Carrots, and Onions
Thursday:
Homemade Pizza
Inspired by my trip to the Natural Products Expo, I have my eye on some fabulous pizza crusts and can’t wait to try them!
