Oh man, it felt so so good to get back into the swing of things as far as meal planning goes. We had a super successful week as far as that goes. Favorites included the Homemade Fish Sticks and Chicken Stew and Biscuits. Stay tuned there are recipes coming for both!
One thing I need to work on is eating healthier during the day while I am working from home. Often times after the morning rush is finished, I get started on my work and don’t come up for a breath until it is lunchtime. By then I am starving and don’t feel like spending the time to prepare anything. Sometimes leftovers takes care of that but most times it is cheese and cracker or even a cookie (gasp!). I am going to try to make a soup or stew (my favorites) on a Sunday to last me all week long. I used to be on an awesome salad kick that I need to get back on. But heck, I need to find some good local cheese! There’s no Valley Milkhouse around here. :/

Sunday: Baked Haddock with a Red Pepper Compound Butter
I have been watching the sales at Whole Foods and anytime fish goes on sale, snatching the fresh catch up. This week it’s haddock!
Monday: Chicken Bruschetta Pasta
Tuesday: Chili and Cornbread Muffins
Wednesday: One Dish Turkey and Vegetable Kielbasa
Thursday: Chicken Enchiladas and White Rice
Friday: Vegetable and Pork Lasagna
Saturday: A Mini Thanksgiving Dinner!
We are having some friends over and I am thinking this would be a fun idea!
