We went slightly off plan last week. Not for many days, really just for two…Friday and Saturday. My parents came over these two days. Have I mentioned that my mom is a wonderful cook? Well, Friday she brought G BBQ Spareribs. Yep, you read that right, my 5 year old son got BBQ Spareribs from his grandmother. Like full on slowcooked, homemade ones. That paired with some Baked Beans, biscuits, and baked potatoes and it was a meal!
We cleaned all day on Saturday and honestly I just didn’t feel like cooking SO it was a glorified breakfast for dinner night. Everyone enjoyed it! Fried eggs, bacon, sausages, homemade pancakes…YUM!
CSA pick up was this week to so that will certainly get worked into the meal plan. We got kale, potatoes, winter density, onions, carrots, turnips, pac choi, broccoli raab, and kohlrabi. Love these winter goods! Oh and we got a tomato. Yep, a farmer near hear heats his greenhouse with wood and delicious tomatoes in winter were born!
Here’s what’s on the menu for this week:
Banana Bread (I have a million bananas!) for breakfasts as well as leftover pancakes.
Sunday: Baked Chicken with a Greek Balsamico and Rice and Pac Choi
Monday: Rotini Pasta with Creamy Tomato Spinach Sauce
Substitute kale for spinach and we’ve got a meal!
Tuesday: Friend Time!
We are having some good friends over for dinner, friends from the farm. They are bringing (I can’t wait!!) and so I have the appetizer and drink. I’ll make some sort of appetizer that includes acorn squash:) and I am sticking with Souffle Bombay’s Apple Pie Moonshine for the drink;)
Wednesday: Fresh Vegetable and Pork Lasagna
I’ll be putting some kale and broccoli raab in this one!
Thursday: French Onion Soup and Grilled Cheese
I just got a new Dutch Oven and I just can’t wait to try out some delish French Onion Soup in it! My grilled cheese will have a LOCAL tomato on it! 
Friday: Tacos - Just good old tacos!
Saturday: Chili with Sweet Cornbread
Continuing on with our monster purge, it will be good to have a crockpot on this day!
