After 10 days of painting, DIYing, and unpacking, we have officially moved in. We dropped off the apartment keys, said goodbye to our temporary home (H is so confused), and said hello for good to our new one. Let the madness of renovating and the settling down of life begin. Finally, time to set our roots in.:)
This week we are trying out a few new dishes. After a few weeks of being all over the place, we are ready to head out to a local farmstand and get some goods! First up is some herb saving with the new Ball Jars brand equipment I got. Then, it is catching up on canning time! Can’t wait to eat fresh again!
Here’s what’s on the menu plan for the week:
Sunday: Homemade Spaghetti Sauce, Pasta, and Fresh Veggies
Time to start stocking up the freezer! I’ll be making a big pot all day since we’ll be around. I know, seems like a hot thing to do BUT it will serve us well in the coming weeks as we’ll have tons of leftovers to freeze.
Monday: Homemade Chicken Nuggets and Rice with Corn on the Cob
Tuesday: Leeks and Potatoes - A Classic Soup (and Grilled Cheese)
I saw some delicious looking leeks at the market the other day that I just couldn’t resist…so I didn’t;) Ben is going to be excited! It’s one of his favorites!
Wednesday: Chicken Parm with Spinach
Thursday: Burgers and Grilled Veggies with Pasta Salad
We are picking Ben’s parents up from the airport today so I am going to have some food ready to go on the grill. I’ll make a pasta salad and we’ll be all set to relax and catch up!
Friday: Slow Cooker Shredded Meat and Mexican Rice
Ben’s parents are visiting for a couple of days. Mexican and make your own taco nights are always great ideas for company! I’m not sure what our plan is for the day so having the meat cooking in a slow cooker is a good idea.
Saturday: Seafood!
We are going to show Ben’s parents a good ‘ole Lobsta Bake. Testing it out for a big celebration at the end of this month! Now I need to find a good local seafood supplier.:)
