I realize that EVERYONE follows, pins, and posts about their favorite crock-pot meals.
I too am a “pinner” of crock-pot meals.
Selfishly I am writing my own round-up of crock pot meals that I just have to try this fall. We have been going crazy with after school activities and honestly even when we have a free night, I just want to be outside in the fall. Don’t get me wrong, I LOVE to cook, but I also love being outside in this weather.
Below is my most recent list of “must trys” for the crock pot/stoneware. I plan on getting started this week;)
Stuffed Sweet Peppers
(Katrina Runs For Food)
I would totally fill these with quinoa! A fun creative approach to Southwest night.
Farmhouse Style Chicken and Corn Chowder
(Pink Parsley)
Pineapple Chicken
(Big Oven)
We’ll be grabbing some fresh pineapple for this! We love the pineapple and chicken combo:)
Pumpkin Chicken Chili
(Cinnamon Girl Recipes)

A nice fall spin on the traditional chili. I can’t wait to try this one with the family. We still have some homemade pumpkin puree frozen (and will be making more!) I haven’t done a lot of experimenting with pumpkin in our main dishes but absolutely need to!
Beef Brisket Barbeque
(Hello Homebody)
Ever since trying Fork’s dish at the Heritage Farm Fare, I have been craving beef brisket. Heck, I think I will be trying to whip up some of their squash and marrow to go with it too!
Crockpot Chicken Curry
(Musings of a Housewife)
Jo-Lynne Shane posted this over on Musings of a Housewife the other day and I have been wanting to try it ever since. I would agree with Jo-Lynne that I am not a huge fan of curry in general as well, but she seemed to love this one, so I think I need to give it a try!
Crockpot Chicken Terryaki
(Wanna Bite)
This is a favorite meal in our home! I always cook it stove-top, but would love to take a hands off approach on these lovely fall evenings.
Sloppy Joes
(Recipe Publishing Network)
This would be great for a weekend day! We love sloppy joes and this is a bit of a more natural approach:) And I may just add a few extra veggies in here to. Mwahahaha:)
Crock Pot Chicken Enchilada Soup
(Crock-Pot Ladies)
Did I mention that we love Mexican cuisine? Well, we do…this would be a hit!
Apple Butter Pork Chops
(Crystal & Co)
We are big pork chop fans over here AND now, after this fall season, I have a whole lotta apple butter stored up! This recipe is right up our alley!
(Confessions of a Stay at Home Mom)
Even better than this recipe are the suggestions that Stephanie gives to go along with it. She uses this chicken in meals throughout the week.
What is your favorite meal to cook in the crock-pot?

I pinned this! I set myself a goal of using the crockpot weekly for one meal, but I have almost no recipes.

YUM! That is a lot of good food choices. I am making something in the crock pot one night this week. I don’t know what yet.

It is so easy and I love that dinner is done when you need it with such little work:)
I love my crock pot. I just it weekly when making meals but my favorite thing to make is crock pot oats. It’s seriously the easiest thing ever!
I agree! Love oats in the crock-pot!
I actually have a NEW favorite completed this morning: steel cut oats with coconut milk, apples, and raisins. So delicious!
