The Heavenly CSA Share – May 15th, 2013

In the two weeks that we didn’t have a share (a break between winter and summer seasons), I found out just how much I missed the farm and all of the delicacies that come from it. I missed these things a lot. Which of course made it all the more sweeter when the CSA started back up again last week.


In the first summer share last week, our bag was filled with a bunch of great vegetables. It was certainly on the smaller side (I am sure because of the cold-er temps in the NE this spring), but still, lots of goodness! Luckily a neighboring farmer had plenty of asparagus to give as well as some greenhouse tomatoes. We also got collard greens, radishes, red lettuce, and spring garlic onions.

The first week went well. The spring onion was split between my Fresh Spring Vegetable Tomato Sauce (where I also used some asparagus and a zucchini from my early blooming plant) and taco night. Red lettuce of course went into salads. The tomatoes were used to top Black Bean Burgers. And the remaining asparagus we grilled at a Mother’s Day dinner. The only thing left at the end of the week was collard greens. It took me until yesterday to decide how to use them, but when I did, man oh man was I happy! It opened the door for tons of possibilities and so Collard Green Enchiladas were born!

This week I am SUPER excited for. The name of the game is greens (with a bunch of other fun stuff thrown our way)! Eckerton changed it up a bit this week and instead of having everything packed into bags already when you picked up, you made your own bags. Gotta say, I am going to love this set up!


The Breakdown

Bok Choy – We already had stir fry on the menu, so of course it will be in that!

Rhubarb – I am going to cut it up and freeze it so that I can make Strawberry Rhubarb Jam in a few weeks with fresh picked strawberries.

Mustard Mix, Wild Watercress, Pea Shoots, Mesclun Mix, Mixed Baby Lettuce Heads – Sounds like a delicious salad week to me!

SpinachSmoothies of course, and maybe some lasagna!

Red Russian Kale – Hmmm…aside from kale chips, I am going to think on this one. Any suggestions?

Asparagus – I am thinking another pasta dish, but then again I may try a risotto!

French Breakfast Radishes – I have to say that I missed slicing these on my salads!

  1. This is the first year we’ve ever done a CSA, and I’m loving it! We’ve been having salad greens, radishes, spring onions, turnips, and strawberries, and every week we get a dozen eggs and some type of fresh meat! I still go to the Farmer’s Market every week too, but being in the CSA program ensures me that I’ll always get the meat and eggs even when the Farmer’s Market is sold out.

    I was also scratching my head about the Red Russian Kale. Then I read how that variety is an heirloom which is more tender than what we normally think about kale (thanks, Eckerton Hill Farm). I found this great recipe for Kale and Cheese Omelette: and now I’m looking forward to more Russian kale.
