I have been incorporating all of our CSA produce into just about every.single.meal! It is so fun to see how the taste of dishes that I am so used to eating changes. Tomato sauce, tacos, you name it, the flavor becomes so much more fresh in the summer time when the vegetable harvest is over flowing!
For lunch I have been enjoying sandwiches a lot lately. This is mostly because I have a never ending supply of Eckerton’s heirloom tomatoes and refrigerator pickles! A sandwich is nothing without these two components:)
Chicken salad is one of my favorites on the menu and is an easily adaptable item depending on what is in the fridge. Below is my recipe for the latest favorite Summer Harvest Chicken Salad!
We often have chicken leftovers after grilling out or even incorporating chicken in to another meal. We have been eating less meat in each meal and trying to pump them up with more veggies. So now when we have leftover chicken, I chop it up with my salad choppers and save it in a container.
This week we had some celery, green peppers, red onion, and fresh cherry tomatoes on hand so I chopped all of these up (except the tomatoes) and added them to the chicken.
I added mayo (to taste), fresh dill (I used Gourmet Gardens new herbs in a squeezable container -PERFECT!), a pinch of salt and pepper and stirred.
Of course, like I said, no sandwich is complete without tomato and pickles so those went on top:) There you have it, a delicious chicken salad…
Ingredients
- 1 1/2 cup cooked chicken breast, chopped
- 1/4 cup celery, chopped
- 1/8 cup red onion, chopped
- 1/8 cup green pepper, chopped
- 1 Tbsp fresh dill (I used Gourmet Garden)
- pinch of salt
- pinch of pepper
- sliced tomatoes and pickles for topping:)
Directions
- 1. Chop up celery, onion, and pepper and add to chicken.
- 2. Add mayo, dill, salt, and pepper and stir.
- 3. Place on whole wheat bread (if desired) and top with sliced tomato and pickles.
- 4. Enjoy!

YUM! We love a good chicken salad. My favorite is to get a chicken from the market and use it for sandwiches and soup throughout the week…saves a lot time.

I need to get back to doing that! That seems to be my staple in the winter but chicken salad is the perfect summer lunch!
