I started going through my cookbooks this week. My intention was that I would just get rid of some of them because rarely do I browse through them. In actuality, as I started going through them, I realized, there was a reason that I bought them in the first place and that there are some really great recipes in there! So, I challenged myself to a little friendly “Recipe Challenge”. Each of my weekly meal plans will include at least one new recipe, either one that I have bookmarked online or one that is out of one of the many cookbooks that I own. I will then let the family score it to see if it can be included in our “line-up”:)
I pinned this meal last week and of course now I am craving it. This stew by Lauren’s Latest looks phenomenal and will taste great over some homemade mashed potatoes! I’ll use some of our CSA carrots and potatoes as well! Perfect for a night of Irish Dancing:)
C’s choice: Going with our attempt to inch meat out of our diets (shhh, keep it on the D.L. from the husband), these kind of meals are a great start because everyone is a fan and adding some greens into our quesadillas has worked perfectly.
- Wednesday: Pasta with Meat Sauce and Broccoli
G’s choice: We have some leftover sauce still from last week (when I make it, I make a large stockpot), so we’ll throw some ground pork in and enjoy:)
- Thursday: Chicken Stir-Fry
I am hoping for some bok choy or turnips in this weeks share to make this a bit more delicious. Loving the sesame seed terryaki that I use in my stir fry, now I just need to recreate it!
- Friday: Free for all night! Kid’s Choice and leftover night…one of my favorites!
- Saturday: Kielbasa and rice with corn
Ben and the kiddos are on their own tonight since I will be working so this is an easy peasy meal:)
- Sunday: Amazing Beef Vegetable Soup with Grilled Cheese

This will set us up nicely for some lunches next week!

Great meal plan. Sometimes I wish we ate beef so we could have some comfort food like the beef Irish Stew. I have a ton of cookbooks and love to look through them to get ideas, check out my weekly plan this week.

I definitely want to do more meat free meals and quesadillas are a great way to do that. I’m adding black bean & veggie quesadillas to my meal plan this week!

I actually took the time last night to make a (not very creative) meal plan for the week, but it feels sooo good to have everything all planned out!

So cool that you posted this, I just reviewed a cook book with meal plans in it, etc. Cook books are treasure troves… we too, have so many and when I start looking, I find some amazing stuff!
I pinned the beef stew! I think I’ll do it the week before St. Pat’s unless dh wants to make it on St. Patrick’s Day.
