Man, I am getting wiped out by these last few weeks. They have been some busy ones for us. Between showing the house, daylight savings, fun outside, and activities, we have been on the go! A couple of years ago, when I wasn’t meal planning I would have been frazzled beyond belief. It is amazing what a little planning ahead can do for not only your health (because you eat more meals in) and your sanity! I’m thankful that I have a plan now.
Tomorrow is St. Patty’s Day and the kids are SO excited! I think they have been amped up in school and are hoping that the little “Leprechaun” visits their classroom. They’ll be making their Leprechaun trap this afternoon in hopes of catching one…we’ll see. I plan on making some Irish Soda Bread this afternoon and tomorrow when they get home from school we’ll make some Irish Potatoes, ones that they can do with just a little help! Need some ideas? Sunday: Cheese quesadillas
Monday: Irish Beef Stew
As much as I would have loved to try something different, the kids LOVE this meal and it was their pick so here we go again:) I am pretty stoked to use Wyebrook Stew Beef and Eckerton Carrots!
Tuesday: Pineapple Chicken in the Crockpot
I’ll be serving this over some white rice. I can’t wait to try this naturally sweet recipe! I think the kids are going to love it. Bonus – it is a crockpot dish which means less prep time! Perfect!
Wednesday: Kielbasa, Quinoa, and Corn
Thursday: Leftover Night
We have been having one of these each week and honestly, it is so needed. We always have extras and by midweek, we have enough for a whole meal!
Friday: Homemade Chicken Nuggets
Saturday: Grassfed Beef Tacos with Black Beans and Homemade Canned Salsa
Meal planning and Using the Crockpot in the Spring
We all have busy lives year roung but the beginning of the spring is often extra busy. Outdoor activities begin, the kids want to be outside 24/7, and by the time you get inside it is 5:30 and time for dinner or time to leave for the next thing. That isn’t even counting homework:/ The crockpot can save the day! I often use it on some of my busiest days.
And a bonus of using the crock pot? It generally makes a lot and so there are a bunch of leftovers making it {sometimes} two meals worth!
