Weekly Meal Plan: January 19th – 25th

I did it again and again it felt awesome! Stuck to the meal plan!

Last week’s meal plan was a good one that everyone enjoyed. Some old, some new, the family was excited about the meals AND they ate them! Here are some of my notes from last week:

A note about the spaghetti sauce: Man am I glad that I made a huge stockpot of it because this week we will reap the benefits with Meatball Subs for lunch and Chicken Parm for dinner:)

It was the first time that I made Slow Cooker Quinoa Chicken Chili and it was really good! We ended up eating it at night as taco filling instead of a chili but there were plenty of leftovers so I could enjoy it that way too. I definitely would add more quinoa next time as it is a great way to add extra nutrients and it definitley didn’t overpower so I would probably add an extra 1/2 cup or so.

Now onto this week!

Sunday: Chicken Parm Dinner

I’ll be using the leftover spaghetti sauce from last week and breading the chicken myself. This is a crowd favorite!

Monday: Chuck and Kat Meal

Our good friends Chuck and Kat and their “most adorable child in the whole wide world” Elliott are coming over for dinner. They are bringing the main dish and it is a surprise!! The only clue I have a is a text from Chuck to Ben that asks him to choose split pea or potato (Ben of course chose potato). Wonder what it will be? Stay tuned!

Tuesday: Apple Butter Pork Chops in the Crockpot

I chose this recipe from a Crockpot Round-up I did a few weeks ago. I am excited to find a new way to enjoy pork chops since they too are a family fav. We’ll be siding these with green beans and rice.

Wednesday: Soup Party

I am having a little soup recipe swap among friends tonight! I’ll be serving some appetizers and we’ll be making some soup Pampered Chef style while we are here!

Thursday: Baked Chicken, Rice, and Biscuits with Garlicky Smoked Rainbow Chard

Chicken is it this week apparently but my family loves this simple meal and we haven’t had it recently. Garlicky Swiss Chard is a favorite over at Eckerton Hill so we will be eating that with the portion that we received from our share:)

Friday: Acorn Squash Enchiladas

There always has to be something taco-ish on the list! These.are.awesome! Let’s be clear…

Saturday: Homemade Chicken Nuggets, Rice, and Corn

Another staple in this house! We love this meal!
