We had a nice week last night. Lots of snow brought in an unexpected guest. It was so nice to spend time with her and she had a blast with the kids. Our meal plan saved us later in the week as the ice was really bad and there was not really any option to get out to the store. We were all huddled up in our house. That said, so many still do not have power, including my parents that have been keeping their freezer cold on a generator during the day. They refuse to come over to stay as they don’t want to lose everything in their freezer so they are sticking it out. Fingers crossed it comes on soon.
Sunday: Chili in the Crockpot
The family favorite. I now need to figure out how to double the recipe as everyone is always upset there are no leftovers.
Tuesday: Chicken Stir Fry with Turnips and Pac Choi and rice
Wednesday: Fresh Tomato Pie
Both Ben and I will be out tonight and the kids LOVE this tomato pie we get from a local bakery. They’ll be in heaven!
Thursday: Breakfast for Dinner Night
We have been doing this more and the kids love it. Ben isn’t a huge fan but he’ll get used to it;) C and G are both egg fans now and I generally make Beet Pancakes and some sausage from Country Time Farm!
Friday: Valentine’s Day!! Fondue Night!

Saturday: Salsa Chicken in the Crockpot
Such an easy yet delicious one! Served over rice…YUM! Here’s the recipe: 2 breasts of chicken, cooked with 1 jar of salsa and 1 serving of taco seasoning (1 packet). After 6 hours in the crockpot, shred chicken and add another jar of salsa and another serving of taco seasoning. Voila!
