Weekly Meal Plan: December 29th – January 4th

We are pretty lucky this week in that Ben’s parents are in town visiting from Colorado! They were in Iowa (where Ben is from) for Christmas and now they are spending New Years with us! These are my favorite kind of meal plans to create…ones where I can create meals for others! Not that my family isn’t enough but sometimes it is fun to cook for others too!

Sunday, December 29th

We’ll be eating at my mom’s today with the whole family! She is making a Pot Roast, Mashed Potatoes and her famous gravy…YUM!

Monday, December 30th

Homemade Chili with Aji Dulce Peppers

OMG! I knew that Aji Dolces were good but honestly, I didn’t know that they were good enough to entirely change the taste of a homemade chili recipe (for the better)! SO glad I froze a large bag from Eckerton’s harvest this summer!

Tuesday, December 31st

A Bunch of Appetizers: Here are some on my list:

Baked Brie with Jalapeno Jelly
Sausage and Cheese Crescents
Nachos! (one of the kids favorites)

Wednesday, January 1st Bowl day…the family will be out watching Bowl games all day (GO Iowa!) so we are playing it by ear today. Leftovers, sandwiches, that’s what is on the meal plan:)

Thursday, January 2nd

Taco night

I still have some Hot Bread Kitchen Corn Tortillas frozen from my trip to the Union Square Market this summer. I plan on using them up this week (which means that I need another trip to the USM)!

I think I’ll be making a batch of Couscous Tacos as well as some “regular” ones!

Friday, January 3rd

Irish Beef Stew 

A fan favorite!

Saturday, January 4th

Roasted Whole Chicken with Vegetables (Turnips, Potatoes, Carrots, and other veggies in our share)!
