Weekly Meal Plan – April 8th

Weekly Meal Plan Last week, we jumped back on the meal plan train and finished every single meal that was in the plan. It felt really good. It has been taking some time to get used to our new “spring schedule” and figure out that I need to start dinner a bit earlier in the day in order to have time before we jump on to our evening activities.

Monday: Homemade Chicken Nuggets with Rice and Corn

– This is a favorite of the kids and Ben and we will have company, so I am thinking it will be a good meal for everyone. I use and all-spice in the breading. What is your secret recipe for breading things?

Tuesday: Baked Tilapia with Cous Cous and Rainbow Chard

– I will lightly coat the tilapia with Panko crumbs and some spices. The chard I will sautee with olive oil and roasted garlic that is leftover from this weekend. The kids are in love with fish sticks, but adding fish filet as a meal will be new to them, so I am hoping that it goes over well so that we can experiment with different varieties.

Wednesday: Hamburgers (traditional) and Black Bean Burgers with Roasted Sweet and Red Potatoes

– This is a quick and easy meal before Tball practice and one that makes everyone happy. I always mix together my sweet and red potatoes. I am still getting used to (learning to like) the taste of a pure sweet potato, so mixing them helps!

Thursday: Pork Chops with Mashed Potatoes and Green Beans

Friday: Breakfast for Dinner

– I will whip up a quiche including many of the veggies from this weeks CSA share. I’ll also make eggs (for C) and waffles.

Saturday: Kielbasa and Mashed Potatoes

– Wow, we are hitting the mashed potatoes hard this week. I am at work, so this is a great one for Ben and the kiddos. Hopefully it will be nice enough to grill it!

Sunday: Chicken Bruschetta Pasta

– This could be our all time favorite at the moment! YUM!
