Weekly Meal Plan

Ahhhhhh! Spring is killing us on the meal plan front. Though it definitely makes things easier, this transition period of shifting to earlier dinners and then rushing out is taking longer than I anticipated this year. If you noticed, last week I didn’t put a meal plan up. It was a pretty stressful week…T-ball, birthday parties, and all of those other wonderful spring activities. Well, this week I am back and am resolved to getting back on following the meal plan! So, here goes:)

Monday: Chicken Stir Fry

I still have some pac choi from our CSA share a few weeks ago and I can’t wait to use it! I will be throwing in some green peppers, broccoli, and onion as well. This is one of our favorite meals!

Tuesday: Spaghetti with Meat Sauce

Ben and the kids are on their own tonight with me at work and this is one of their staples:)

Wednesday: Chili in the Crockpot and Cornbread

I am counting this as H’s choice for the week. I’ll be trying out a new cornbread recipe that I found by Pioneer Woman on Pinterest here. Continuing the search for an amazing cornbread!

Thursday: Irish Beef Stew

The kids continue to be hooked on this meal! Find the recipe here.

Friday: We are going to Baltimore!!!

Saturday: Black Bean Burgers with Cucumber Salad

We are so excited to have our friends visit from Boston and so we will be celebrating with a BBQ:) Of course, these are our favorite BBQ treats. I am sure we will be throwing some meat burgers in the mix too!

Sunday: Roasted Whole Chicken with Potatoes, Onions, and Carrots

I love using my Deep Covered Baker to make chicken in. It makes it unbelievably moist and flavorful! Super excited to use it again this week for a quick chicken dinner!
