Summer CSA Adventures ~ June 19th, 2013 {Locavore Living Link-Up}

We are back! Let me tell you, a week in the southwest U.S. was nothing short of spectacular, but it was also very…brown. I must say, driving through the Oley Valley on the way to CSA pick-up yesterday was refreshing. The smell of tractors plowing along, covered bridges and broken down barns, and the almost knee high corn was beautiful. And the sight and taste of these veggies was perfect and something that I had been craving all last week!

The variety in our share is kicking up a notch and we are moving from greens to more colors. The ideas for vegetable use is running wild through my brain and yes, a total farm and produce geek at this point in my life, it is keeping me up at night. So, of course, I am excited to share all of my ideas for this upcoming week. Make sure to watch the video below to see all of the produce in our bag in person!

A dream come true in my world is red potatoes paired with the self dubbed “Famous Eckerton Carrots”. You can imagine my (and the kids) excitement when we saw this pair in our share! C deemed carrots her favorite veggie in the share (check out her video here).

It was time this week to pick the beautiful heads of purple cabbage that have been like a piece of art in Eckerton’s landscape for the past few months. I am sure many would be making coleslaw out of this big guy, but I am thinking some Beef Vegetable Soup and possibly some lettuce wraps!

After being away for the last week, we are out of lettuce, so the sucrine that was in our share was much appreciated. And so was the butterhead given to me by the friend that I split the share with! We also got some radicchio that I will be using in salads too. Talk about gorgeous salads, the nasturtium that I planted is also blooming:) Wait until C sees me take a bite out of a flower.

Broccoli? What broccoli? It is already gone and eaten:)

We got some multi-colored beets this week and I already have the perfect idea for them. Don’t worry, I’ll be sharing next week! In the meantime you can admire their beauty.

The over ripened onion (in a good way) that we received will be perfect for pulled pork this week. Its sweet taste will be welcomed. It was either that or a homemade spaghetti sauce…

Red Russian Kale: Smoothies are in order or maybe even some spring veggie pasta.

Parsley: Grilled pizza and any other dish for sure!

Rainbow Chard: Not sure yet, but one of these great ideas I am sure!

  1. I’m so glad you do this each week, I’m a CSA newbie and I’m totally failing to eat it all before the end of the week. Hopefully soon I’ll have a recipe or two to share, but until them, we’re frantically eating cabbage and lettuce. TONS of it. ;-)

  2. Gorgeous food.. yum! I can’t wait to see what you do with the beets. I shy away from beets because the only way I’ve ever had them was pickled – and, ew.
