Sea Salt and Cracked Black Pepper Potato Chip Chicken {Recipe}

We are always looking for a quick weeknight dinner in this house. That said, my family expects a lot of the cooking:) They have a phenomenal cook in their nanny and their mom isn’t so bad, so bland foods don’t go over so well. I love when I find something that’s quickand easy without a bunch of crud in it. :)

Last month I had the chance to review Tyrrells Potato Chips. You can check out my review here. I won’t bore you with all of the details of it, but in a nutshell, I love that there is nothing artificial about them, and that they are incredibly tasty too! I am sure this won’t be the last that you hear of them. :)

As soon as I tasted the different flavors, I knew I had to create some kind of meal from them. Their flavor is delicious. While I loved the Sweeet Chili and Red Pepper flavor, I thought we’d try the Sea Salt and Cracked Black Pepper¬†for this recipe first. We loved it.

Sea Salt and Cracked Black Pepper Potato Chip Chicken {Recipe}

Ingredients

  • 3 breasts of organic chicken
  • 3 cups of crushed Tyrrells Sea Salt and Cracked Black Pepper Potato Chips (or another flavor)
  • 1 egg
  • 2 cups organic plain yogurt

Directions

  1. Preheat oven to 400 degrees.
  2. Grease a cookie sheet (I use olive oil).
  3. Whisk egg in one bowl and mix with plain yogurt.
  4. Take chicken breast and submerge in egg/yogurt mixture.
  5. Coat the chicken in chip crumbs.
  6. Place on greased cookie sheet.
  7. Bake covered for 15 minutes.
  8. Bake uncovered for 15 minutes or until cooked all the way through.
  9. ENJOY!.
