Quinoa and Vegetables With a Kick {Recipe}

I have been completely in love with quinoa lately. At first we had a love – hate relationship. I loved the nutritional benefits, just hated the taste. I have determined though that it was just the way that I was cooking it. As soon as I started washing it again (even though it said it had been prewashed) and cooking it in vegetable broth, the bitterness went away and I fell in love. Talk about nutrients. Quinoa is like the best whole grain (without being one) and filled with good ol’ plant protein, lots of fiber, and good for you fats.:)

As soon as we received this week’s CSA share, I knew exactly what I would do. I decided to cook a nice quinoa vegetable dish. The thing that made it special is one of my favorite things to throw into a dish — Eckerton Hill Farms smoked peppers. Oooh they are so good! It was a smoked yellow thai. YUM!
The dish turned out delish and was packed with good for you nutrients. So here’s how it went down:
Wash your quinoa. Even if the package says it has been washed, I always get better results washing it again. To do this I just put measure out my quinoa and put it in a bowl. Fill it with water. Swish it around and drain out the excess water. If you have a fine strainer, you can use this too and will be a bit easier.
Cook quinoa in vegetable broth. I use double the liquid. So for 1 1/2 cups of dry quinoa, 3 cups vegetable broth. Cook according to package directions. (I cooked mine by simmering 10-15 minutes until liquid was absorbed and quinoa was fluffy)
Saute vegetables. Saute carrots, scallions, and turnips in olive oil for about 3 minutes. Throw in chopped kale and seeded smoked pepper (I used a yellow thai but you can use any kind or even a thawed hot pepper saved from last summer:). Continue to saute until the veggies are just tender (~another 3 minutes). 
Toss in cooked quinoa. 
Quinoa and Vegetables With a Kick


  • 1 1/2 cups quinoa (double washed)
  • 3 cups vegetable broth
  • 1/8 cup chopped scallions
  • 1/2 cup diced carrots
  • 1/4 cup diced turnips
  • 1/2 cup chopped kale
  • 3 Tbsp olive oil
  • 1 smoked pepper (I used a yellow thai and did not use the seeds)


  1. Wash quinoa (rinse it again).
  2. Cook quinoa in vegetable broth.
  3. Saute carrots, scallions, and turnips for 3 minutes in olive oil.
  4. Add smoked pepper and chopped kale and saute for another 3 minutes.
  5. Toss in cooked quinoa.
  6. Enjoy!

  1. Mm! I find that quinoa needs the right recipe. I also love it with some light kick, so I often serve it cold with red onion, feta, a drop of vinegar and some veggies. This recipe sounds tasty too!
