Back to these CSA centered meal plans we go. It has been a while since I have done one but I have to say, I really enjoy thinking about how I am going to use my share. AND it helps me stick to a plan for sure! What did you all get in your shares this week? Have any suggestions?

CSA line-up:

French Breakfast Radishes – I must say, I was SO happy to see these pink, long, thin radishes this week. Sliced in half, I will be enjoying these on a salad for sure. Or even just as a snack by themselves.

Seedless Watermelon from John Weaver – GONE! The boys devoured it as soon as I walked in the door. Hands down, the best watermelon I have ever tasted for sure.

Mustard Lettuce Mix – Salads here I come…

Peaches from Scholl Orchards – These were HUGE! I have been cutting them up to put in C’s lunch and she is pretty happy about that.

Eggplant – A few weeks ago I would have been worried, but this week thanks to the research I did for 10 Eggplant Recipes You HAVE To Try, I have plenty of ideas. I am thinking about either the Roasted Eggplant and Red Pepper Dip or the Quinoa Risotto. Hmmm…

Zucchini – We have been combining these and the Sungolds on skewers and grilling them these last few days of summer!

Mixed Heirlooms – This week…grilled cheese and tomato of course! Oh…and salads, other sandwiches, etc.

Poblano Peppers – Oh man have I got a recipe coming for you all…stay tuned! I have also been slicing these and enjoying them in eggs along with some tomatoes. They make a great omlet! Poblanos are great because they are SO flavorful and not too hot (honestly they aren’t really hot at all).

Spicy Busy Basil – This amazing herb (my favorite basil variety) will be headed into a big pot of spaghetti sauce!

I’d love to hear your fresh cooking plans for the weekend and upcoming week!
