Muffins: The Perfect Breakfast or Snack

Let’s talk about muffins today. Why you ask? Because it is getting close to the start of school and mini-muffins are always on the to do list before a busy school year. I realize that sounds a little crazy but little muffins make the perfect on-the-go breakfast and snack to throw in a lunch or eat after school.

I start early and stock up on regular size and mini muffins by making a bunch and freezing them. They freeze so well (along with bread) and taste just as yummy when pulled out of the freezer. Just today I made some blueberry muffins with the last of our fresh picked blueberries. I usually make a double batch and around this time of year I take half of them, wrap a few at a time in plastic wrap and then put them in a freezer storage bag.

Keep in mind that a great time to freeze muffins is when the produce you are making them with is in season or in the case of  some, just freeze the produce (shredded zucchini, chopped strawberries and rhubarbs, blueberries) to make them later.

Oh and I always use applesauce instead of oil or butter…love…

The recipe I follow is an adaptation of Mom’s Zucchini Bread from All Recipes (heck, maybe one day I’ll post my changes):)

  • Berry Best Blueberry Muffins 

I got my recipe from a co-worker a few years ago and I haven’t turned back since. It is the healthiest combination of egg whites, whole wheat flour, and applesauce that you can think of.

Farm fresh carrots make these muffins so don’t try cooking without them:) And whip up some fresh icing for a special after school treat!

These look amazing, especially with apple picking season coming up!

I am addicted to cinnamon and my kids love it too. These I am sure are delicious!

  2. Is the ratio of applesauce to butter the same? Do you replace all butter with applesauce? I couldn’t click on the blueberry muffin recipe and it sounds delicious!
