Cucumber Feta Salad


This summer I am growing a garden specifically to subsidize my fresh cravings. This cucumber feta salad is definitely one of those cravings. Simple yet full of flavor, chilled, it is perfect for a hot summer day! Who am I kidding? I ate it last weekend with friends when it was 60 degrees out and it was delicious then too. But really, try it any time of year you like, though I am a firm believer that everything tastes better with the farm fresh veggies of summer. :-)

I was lucky enough to score a cucumber plant at our local greenhouse a few weeks ago that is already in bloom, and I have scored some yummy cucumbers off of it so far! The last of my feta came from Briarcroft Farm goats (oh what I wouldn’t give for more of it!) and the red onion and cherry tomato were store bought. But I was definitely dreaming of how delicious this will taste when my garden starts producing!

Cucumber Feta Salad (Serves 6-ish)



2 medium-large cucumbers, chopped into small pieces

1/2 pint (or more) cherry tomatoes

1/2 large red onion chopped

1/2-3/4 cup crumbled feta cheese

1/4 cup balsamic vinaigrette (I used a locally made one)


Combine all ingredients.

Chill for a couple of hours in the refrigerator.

    • Thanks Jacqui! You should absolutely grow your own! I have grown all of mine in containers for the last two years and it worked wonderfully. I am finally getting back in the ground (in addition to the containers) this year. Anything is possible:)
