Last week we stayed on track with the meal plan for the most part. I tried my hardest to create healthy, homemade dinners for my family every night. A friend’s Facebook status yesterday put it all into perspective for me. She was cooking meatloaf for her family that evening and said, “My family is lucky tonight…” SO true. It is really hard to put together a meal every night for a busy family of five. We are lucky when we get to sit down and eat together a meal from scratch and it just isn’t going to happen every night at this point in our lives. The best we can do is try. We really are lucky.
My favorite part of the meal plan last week was lunch. We are back into mesclun mix in these parts and not a whole lot makes me happier. Last week was the feta share from Briarwood Croft farm and so it was doubly exciting. I also learned how to shell and cook cranberry shelling beans and they made a DELICIOUS addition to those salads. Oh man, I could get them every week and be happy!
So here is what we have going on this week…
Monday: Grilled Cheese and Carrots from our garden
We are back into soccer on Monday nights so this was a quick meal for us.
Tuesday: Homemade Chili in the Crockpot
I’ll be using some freezer tomatoes for this one. I wish I had some cranberry shelling beans leftover because they would make the perfect addition for this!
Wednesday: Roasted Pork with Root Vegetables
We have some carrots from our garden to use and turnips from the farm. Add potatoes and we have a delicious meal!
Thursday: Homemade Pizza with Veggies from the Farm
This has been a favorite of ours recently and a great way to get some extra veggies in! The last of the tomatoes are coming in from the farm now and I love fresh tomatoes on pizza…oh and feta. Definitely feta!
Friday: Hot Dogs on the Grill with Beans
We have an event at school tonight so it will need to be a quick dinner for us!
Saturday: Crockpot Taco Chicken
Friend’s have been raving about this taco chicken recipe they have been making using salsa and some taco seasoning so I am going to give this a try. We LOVE tacos!
A friend posted this recipe of mine last week and it reminded me that I haven’t made it in a long time. C loves meatloaf so she will love this!
