Couscous Tacos

Here is another throwback recipe from my college days. This one is from senior year when there were 6 of us living in an apartment together. Two of my roommates were tremendous cooks and would often create recipes that we would then all take part in making on nights when we would eat together.

This one was a favorite. We were a pretty healthy bunch of girl, even back then, and this was a pretty healthy recipe which made it a regular in our apartment. Danielle, my roommate, came up with this one and after all these years, it is still one of my favorite meals (partly because it is delicious, and partly because I enjoy the memories).

*I need to add in a note here and say that we went to The University of New Hampshire which is and was as a whole, pretty progressive on the health front. So I am not sure that I had the “typical” college experience.

Anyway, I am still in love with this recipe. It makes a LARGE amount and so it is great for leftovers all week long.

Basically the couscous serves as a substitute for taco meat and, depending on which seasoning you use, it’s a vegan meal too!

Couscous Tacos

Ingredients:

one box of couscous (or 1 1/2 cups of dry, plain, couscous)

one small can (6oz.) of tomato paste

one packet of taco seasoning (or the equivalent of one packet if you make your own)

all of the sides that you would usually put on tacos (my favorites are avocado, sour cream, and salsa!)

Directions:

Step 1: Make the box of couscous according to the directions. For 1 1/2 cups dry couscous, boil 3 cups of water. Add in the dry couscous and cover. Take off of the heat. Let sit for 5 minutes.

Step 2: Add in the tomato paste and taco seasoning and stir. Make sure to get all of the couscous from the bottom of the pan stirred in.

Step 3: Make your taco and ENJOY! 

Sometimes we enjoy couscous tacos with tortillas, other times I just enjoy making a good old taco salad with lettuce and all of the other sides as a bit of a healthier option.

  5. Looks yummy, we’re going to have to try that soon. I love Mexican food and think I have finally convinced my wife that nachos are a meal :-) I made a very healthy taco salad this weekend and will have to blog about it soon (and make it again to get some pictures). Organic lettuce, tomatoes and bean sprouts, plus cumin, shredded cheese, black olives and some salsa.
