Chocolate White Chocolate Chip Muffins

G and I had some time alone while C was at school one afternoon and H was sleeping, so we did what we often do, went to the kitchen and created! These are family (and friend) tested and approved:)

Chocolate White Chocolate Chip Muffins

Cook Time: 16 minutes

Yield: 1 1/2 dozen

Chocolate White Chocolate Chip Muffins

Ingredients

  • ¾ cup butter
  • ¾ cup sour cream
  • 1 ½ cup white sugar
  • 2 eggs
  • ¼ cup milk
  • 1 ½ tsp vanilla
  • 1 2/3 cup flour
  • ½ tsp salt
  • 1 1/2 tsp baking soda
  • 1 cup white chocolate chips
  • 1 cup of cocoa powder

Directions

  1. Preheat oven to 350 degrees.
  2. Line or grease muffin tins (see below notes).
  3. Cream together softened butter, eggs, sour cream, and sugar.
  4. In another bowl, mix salt, baking soda, flour, and cocoa powder.
  5. Add flour mixture, vanilla, and milk, to the creamed mixture.
  6. Stir in chocolate chips.
  7. Fill muffin tins ¾ full.
  8. Bake for 16 minutes or until a toothpick comes out clean.

Notes

*Note: I have tried this recipe in mini and regular sized muffin tins. Because the white chocolate chips are not mini, I think that it turns out best in regular sized tins because they are less apt to break apart.
