So, it took me forever to share this recipe with you. It was all because of the title. The recipe is perfect, it is the title that is hard. When you write sugar cookie, it sounds bland. I needed to get in surprise (because man oh man is there a surprise) and explosion (because holy heaven that explodes in your mouth). After reworking the name numerous times, I finally settled on Chocolate Surprise Sugar Cookies! And it STILL doesn’t describe the deliciousness of what you are about to try!
Here’s how the recipe goes down:
Remember that Chocolate Buttercream Icing that I posted last week? It all starts there. I made a batch of the icing first, rolled it into little balls and froze them separately on a cookie sheet.
Then I whipped up the sugar cookie dough (recipe below).
I placed a butter cream icing ball into each sugar cookie and baked until done.
Let those cookies explode!
Ingredients
- 24 small Chocolate Buttercream Icing Balls: Recipe
- 1 1/3 cup unsalted butter
- 2 cups granulated sugar (put 1/2 cup aside)
- 2 eggs
- 1 1/2 tsp pure vanilla extract
- 3 1/2 cup flour
- 1 3/4 tsp baking powder
- 1 tsp salt
Directions
- Make Chocolate Butter Cream Icing.
- Roll icing into small balls.
- Place icing balls on a cookie sheet.
- Freeze for at least 4 hours.
- Make Sugar Cookies:
- Preheat oven to 350 degrees.
- Soften butter.
- Whisk together butter, sugar, eggs, and vanilla.
- Combine flour, baking powder, and salt in a separate bowl.
- Add flour mixture to the butter mixture and mix.
- Roll a ball of sugar cookie dough over a frozen chocolate buttercream icing ball covering the entire thing.
- Place on a baking sheet covered in parchment paper.
- Repeat until baking sheet is covered.
- Bake at 350 degrees for 10 minutes.
- Cool on a cooling rack.
- ENJOY!
