Carrot Cake Cupcakes and Muffins

Spring and Easter make me crave carrot cake. I am more of an icing girl, but for this particular treat I like the cake part the best! It is another one of those sweet treats that I don’t mind my kids eating for a treat. With 3 cups of carrot in it, that part makes me happy.

These cupcakes would be the perfect dessert for an Easter gathering or maybe even just for a nice brunch with friends. My kids prefer them un-iced and so I made some muffins to;) In their words, “These are better than Oreos”. Success!

Carrot Cake Cupcakes and Muffins

Ingredients: 

Cake –

4 eggs

3/4 cup applesauce

1/2 cup vegetable oil

1 3/4 cup sugar

2 tsp vanilla

2 cups flour

1 1/2 tsp cinnamon

2 tsp baking powder

2 tsp baking soda

1 1/2 tsp salt

3 cups shredded carrots

Icing –

I used Martha Stewart’s Cream Cheese Frosting Recipe

Directions:

1.Preheat oven to 350 degrees and grease or line muffin tins.

2. Mix together eggs, applesauce, oil, sugar, and vanilla.

3. Stir in flour, cinnamon, baking powder, baking soda, and salt. *This is the time when most people would add a cup of pecans. We did not.

4. Stir in carrots. *Farm fresh are the best:)

5. Spoon batter into muffin tins until 2/3 full.

6. Bake for 16-18 minutes or until the old toothpick comes out clean.

7. Make icing while cupcakes are baking. When cupcakes are cool, ice them with a thin layer of cream cheese frosting. Add a little decoration for Easter too! *I took a slice of carrot and cut a small triangle out for the carrot. Then I used spinach for the “greens of the carrots”.

8. Get ready to enjoy:)

Makes 2 dozen cupcakes or muffins.
