A Farm to Table Meal – Fried Egg Over Rainbow Chard and Mache and Radish Sourdough Toast with Goat Cheese

Last week I had a Farm to Table Meal on the Menu Plan, but because something came up, it was kiboshed. This week, the family wasn’t getting off the hook that easy. I am on a roll with the meal plan this week! Monday G had Pork Chops on the menu and Tuesday was C’s Meatloaf. Both were meals that they love, so I made sure to tell them that there would be no complaining when mom got her choice on Wednesday. :-)

When I served this “Farm to Table” meal, Ben and I just held our breath. Then something happened. Chewing. This getting used to new foods is working, and my kids officially ate and absolutely enjoyed their first real “Farm to Table” meal. It was awesome and the food was beautiful and delicious and…fresh. All items were from either this week or last week’s CSA share.

Mache and Radish Sourdough Toast

 

Mache and Radish Sourdough Toast with Goat Cheese

Breadmaker Chris at Eckerton Hill Farm CSA makes a delicious sourdough bread, so this was the perfect base for this side. It is a quick and easily adjustable recipe!

Ingredients:

EVOO

A loaf of sourdough (or your favorite) fresh bread with a crispy crust

French Breakfast radishes

Mache (or another mild green)

Goat Cheese crumbles

Directions:

Preheat oven to 350 degrees. Lay slices of bread on a cookie sheet. Spritz each side with EVOO, generously. Spread mache leaves, radishes, and goat cheese evenly over top. Spritz with a bit more EVOO. Bake until cheese is melted (~10 min).

I snagged this recipe off of Eckerton’s Farmhouse Recipes page (you should totally check it out, there are some great ones there, including Bacon Bread Pudding…you heard that right). I have made this as a side a bunch of times and the colors are just gorgeous. It is something everyone will eat now and I love the whole roasted garlic cloves that are in it!

Some farm fresh eggs were the perfect complement to the meal. I didn’t attempt poached with the fam just yet, but you wait, it will come. C has tried eggs scrambled before and has disliked every bit of it. But this time, she ate 3, yes 3 whole fried eggs…amazing.
